BREAKFAST, LUNCH, DINNER MENUS

Roberto will greet you with freshly squeezed orange juice and coffee/tea. That is, of course, unless you are recovering from too much late dancing at the discos the night before.

Breakfast starts with a platter of fresh fruit, which by the way changes every day, but today includes a choice of sliced watermelon, papaya, pineapple, cantaloupe, mango, strawberries and grapes. It looks as if each slice of fruit has been cut into a different shape.

Of course, there is more freshly squeezed orange juice, as you decide between bacon and eggs cooked to order, perhaps Josefina's famous eggs Mexicana with cheese, pancakes, French toast, or waffles. Ask for chilis only if you are very brave!

Now that you've lounged by the pool, taken a quick jacuzzi and read a few pages of your book, it's time to gather around the dining table with your friends for a sun break. Some of our favorite lunches include the following:


Delicious poached chicken, or perhaps shrimp tossed with lettuce & light vinaigrette dressing and garnished with radish and scallion florettes . . . . Now enough with being healthy. I bet you can't wait to enjoy our mouth watering, homemade potato chips still warm from the kitchen! These are wonderful treats and you'll never be able to go back to a bag of store bought potato chips again without thinking of us!


Josefina's homemade tortilla soup is fabulous, but she may substitute fresh corn or vegetable soup depending on what looks wonderful at the market in the morning. Ceviche also may be a first course. Along with the main dish, this becomes a light, Mexican meal and fresh fruit is a refreshing way to complete your meal. Various Mexican favorites that may also find their way onto the lunch table include tacos, refried beans, enchiladas, fajitas (perhaps cheese, beef, or chicken) and quesadillas (fish, cheese, or chicken).


The men in particular love this meal. Josefina barbecues filet mignon on the open grill. She then slices the filet and places it on a roll with sliced avocado, tomato, lettuce and a thin slice of sweet onion. The ladies feel they can indulge because the rest of the meal consists of a light tossed green salad.

Another variation of this might be club sandwiches with potato salad. Roberto may surprise you with either freshly squeezed pineapple juice, lemonade or his famous conga (fresh fruit) drink.

Dinner is the most formal of the meals, taken outdoors, where you are cooled by the Pacific breezes (las brisas), yet warmed by the lights of Acapulco. We always dress for dinner. Roberto knows l50 different folds for the napkins, so he sets the table in a different, elegant setting each evening. We start in the gazebo (palapa) with margaritas or cocktails and then move to the dining room - candlelight and beautiful flowers on the marble and glass table complete the setting. A few favorite menus follow:


Depending on Josefina's choice for the evening, one night the scampi might be sautéed in a little olive oil and fresh garlic; another night grilled on the barbecue. In either case, the giant shrimp are delicious. The green beans will be presented as a bundle tied with salted onion ribbon. The salad every night varies a bit and is served by Roberto. Dessert can be a traditional Mexican flan, bowl of mixed fruit, bananas flambé, cheesecake, crepes, or ice cream sundaes. Vanilla beans are so plentiful that they sometimes drop from the trees to the street in Acapulco so don't miss having wonderful Mexican vanilla ice cream. Eat your heart out Baskin N Robbins!


A beautiful salad is always the first course for our dinners. You might have chicken rather than beef for the shish kebobs, which are grilled with a medley of vegetables. You'll be surprised. Dessert will vary every evening as well.


One night the beef filets are grilled on the barbecue and cooked to your specification. Another night you may enjoy grilled chicken breast or fresh lobster. A wonderful gourmet evening, however, is when Josefina decides that the red snapper is going to be the fresh fish of the day. She grills a whole snapper on the barbecue for each person. Of course, a separate plate for the rest of dinner needs to accompany this particular meal. This might include rice, fresh corn and broccoli flowerettes. Dessert is always a surprise unless you have a special request. If you have a special occasion, Josefina can also prepare a Mexican feast!
